Its about what NOT to do in a restaurant.
Here’s my newest entry:
- DONT add lukewarm dulce de leche caramel to fairly hot white chocolate that has been melted. It will seize. And it will look like curdled butter soup. ew.
- DONT ask the chef for days off. Even if you are asking four months in advance.
- DONT walk on the line when you arent in your chef coat. You will get yelled at.
- DONT do a chocolate garnish without tempering it.
And that is what I learned today.
